Porridge


An awesome kick start to the day and like all recipes on this blog its super healthy! I could go into how oats are complex carbs and they’re slow burners and give you energy throughout the day, but I will not stoop to that level. All you need to know is that this is a tasty beast with only 5 ingredients. The trick for the creamiest porridge, that doesn’t have cream, is to soak the oats in water for 20 minutes.  Feel free to freestyle with the “topping”, over advent sacrifice your chocolate morning treat to your porridge for a naughty variant. I on the other hand am using preserved summer glut, in this recipe I used strawberry jam. Oh and for a traditional finish you must add a splash of cold milk over the top

    What you need for 3 servings:
    • ¾ of a mug of porridge oats
    • 350 ml of full fat milk
    • a pinch of salt
    • 2 tbsp of honey
    • a tbsp of jam

    How to make it:
    1. Top up your semi filled mug of oats with cold water and let it stand for 20 minutes. After this time pour off the excess water, which should be minimal.
    2. Place the oats in a saucepan, pour over the milk and heat over a moderate temperature. Now the second trick for a creamy porridge is shear (kinetic energy) so get stirring. Treat your porridge like you would a risotto; just think of it as a morning Scottish risotto.
    3. Once it starts to thicken (this takes about 10 minutes or so) sprinkle in your salt and stir in your honey. Keep stirring until it’s thick but not stodgy! If it is too thick add a little water.
    4. Serve with a splash of cold milk over the top and a scoop of your favourite jam/chocolate spread.
